In the municipality of Yaté, in the south of the Mainland, the Chez Pierre ATTI campsite puts local Caledonian terroir on the table. The house specialty is bougna, a traditional New Caledonia dish prepared on order for five to six guests. Taro, cassava, fresh fish or chicken are wrapped in banana leaves and slow-cooked under hot stones or in a pot. The result is meant to be enjoyed slowly, in good company. The everyday menu offers other affordable dishes, designed for travellers heading into the Great South of Province Sud as much as for locals passing through.
