Eat local and seasonal with local Caledonian products in Bourail from Maryse.
On her eighty-hectare property, Maryse Vidoire raises fifty head of cattle and grows seasonal vegetables in Caledonian Province Sud: onions, carrots, dried beans, garlic. The cook also transforms her harvests into jellies, jams (banana, papaya, orange, passion fruit, fig, jamelon, raspberry, mango, sweet potato, pumpkin, coconut), syrups and achards. Aficionados do not leave La Poméa without trying her arranged rums, now one of the house's signatures. Direct sales happen at the farm and at provincial markets in New Caledonia. The grounds combine livestock and market gardening in a logic of local production and short supply chains. Stop by the farm or pick up the products at the stalls.
