In Bourail, Frédéric Rivasseau and his wife Carla run Chez Fred, a traditional bakery well known to regulars across the territory. Sourdough loaves, tradition baguettes, walnut and multigrain breads share the counter in Province Sud, with new items appearing regularly. Buttery croissants and viennoiseries remain morning staples. The bakery has an outside terrace where you can sit with a coffee, a pastry or a sandwich made with the day's baguettes. On the pastry side, Fred prepares tropézienne, pavlova, salted caramel bars, chocolate mousse, Bourdalou tart, rum baba, Paris-Brest, tropical tart on a coconut biscuit base, as well as house-made chocolates and biscuits in New Caledonia.
